Brinjal ACAR
Acars are Pickles made by the Eurasian community with a long history. They were brought first to India by the Mughals in the 16th century then distributed throughout the Indian Ocean by Portuguese traders, adding ingredients like chillies brought by the Portuguese or herbs and spices native to the South East Asian region.

Brinjal ACAR is an Indian style pickle in a tangy, curried sauce. It is identical to the classic Eurasian Salt Fish pickle. Just fry or grill some good quality local salted fish and mix with this pickle. Or keep it plant based, thin with a little vinegar and drizzle over grilled sliced Eggplant/Brinjals.
It is a spicy condiment that can be served with Asian type meals or European/American style grills and barbecues.
It can also be used to add flavour to sandwiches and grilled Tosties
